Ah, Beef Garden Casserole. It brings back memories.
Funny how a simple thing like a casserole would bring back memories and warm fuzzies for me, but it does. This was the meal my mom would commonly make on Wednesday evenings when I was growing up. Wednesdays were always rushed as my brother and I would barely get home from sport’s practice in time to eat and then head off for church. That’s what made this meal so perfect. It’s quick and easy, yet hearty enough to fill the hungriest of appetites!
I remember being starved (or so I thought) after I’d been running for miles (or so I thought) during volleyball or basketball practice. My brother and I would arrive home tired and hungry enough to eat the entire house. I LOVED Wednesday nights when I could almost always be assured that it was Beef Garden Casserole night. Mom almost always made this dish with biscuits on the side. Mmmmmmm, I loved it.
I still do. It’s comfort food at it’s finest!
Beef Garden Casserole
1 lb. ground hamburger meat
4 T. minced onion or freshly chopped onion
2 - 10 ounce cans of tomato soup
1 can green beans, drained (or 1 1/2 cups fresh or frozen green beans)
2 cups frozen corn
sea salt to taste
1 cup shredded cheddar cheese
Brown hamburger meat and onion together. Stir in tomato soup, green beans, corn and plenty of salt. Pour mixture into a casserole dish and sprinkle cheese over the top. Bake in a 350 degree oven for 15-20 minutes or until bubbly.

Also, I highly recommend you serving this dish with fresh homemade biscuits (and butter and honey of course). Yes, because Beef Garden Casserole served with fresh, hot biscuits dripping with butter and honey is mmmmm the best!!! This had to have been one of my mom’s best meals and I can still taste it!
Hey, I don’t have to limit making Beef Garden Casserole to Wednesday nights, do I? I do believe I’ll make this for dinner tonight, even though it’s (gasp!!) a Thursday.
