Editor's Pick: When making curry or creamy soup, just scoop some in and stir a couple of times and it dissolves—no need to open a whole can of coconut milk and worry about it going bad before you finish it. It's a spray-dried powder that can be stored at room temperature, and adding a little to coffee gives a light coconut aroma. It's handy for swapping in for milk when baking, and the texture stays smooth. It's a practical pantry staple for vegetarians or anyone who is lactose intolerant.
