Addressing privacy concerns, Apple designed a Secure Exclave hardware-isolated partition within the S11 chip. All audio is processed locally and immediately destroyed, and neither the operating system nor Apple itself can access it. When the Rewind feature is activated, the watch emits a tone and shows an indicator to ensure those nearby are aware.
