Some oils may appear to have high smoke points, but their oxidation temperatures are actually quite low—meaning they can oxidize and deteriorate even before visible smoke appears. 橄榄油烟点低，但是氧化温度高，200度的烟点基本上不爆炒都可以的，有些油看似烟点高其实氧化温度很低，没冒烟但已经氧化变质了
