Editor's Pick: When you get home late from work and don't want to turn on the stove, just tear open a pack, pour it into a bowl, and microwave it for one minute. The lentils and red kidney beans are stewed until soft, and the tomato-cream sauce has a hint of Indian spice. It's great over rice or with flatbread. Stock six packs in your pantry, and when things get busy, just heat one up for a meal. The vegan recipe is satisfying without feeling heavy.
