一直想尝试做香蕉糕,终于动手做起来了

背景
香蕉糕是一种带有香蕉味的白色圆条状软糕,是香港一种小吃,由糯米粉、粘米粉、香蕉油、砂糖等制成,也可加入豆沙、枣泥等增加口感。里面并没有真正的香蕉,只是形状和味道比较像而已,其香蕉气味来自香蕉油。香蕉糕是香港的传统小吃,在1970年代以前,物质不丰富的时代,香蕉糕曾经是甚受欢迎的零食,但随着西式糖果和零食的大量涌入,如今香蕉糕在香港已不常见,成为一种香港怀旧小吃[

材料

香蕉两根,糯米粉,菱粉(传统的是粘米粉,我用菱粉口感也很好),油,糖,熟黄豆粉(传统的是熟糯米粉),核桃适量
糯米粉跟菱粉的比例大概是3:1,油大概10g,糖适量,按自己喜欢的甜度来,我差不多用了80g左右
做法

将熟透的香蕉压成泥,加入适量糯米粉跟菱粉,边加边搅拌,加到成偏浓稠的糊糊,加入糖跟油,搅拌均匀

容器抹油放入香蕉🍌糊,表面抹平,水开蒸20分钟左右,蒸熟的状态面团会有的发黑(香蕉🍌氧化的原因),筷子🥢插进去没有粘湿粉就可以了

核桃用擀面杖压碎

蒸熟的香蕉糊稍微放凉,案板上撒黄豆粉,将香蕉糊放上,每面都粘上黄豆粉,用擀面杖压薄

撒上核桃碎,卷起来,尽量卷紧点,我这次卷的有点松,切成自己想要的大小

尽量吃完不要放冰箱冷藏,冷藏后口感偏硬
