Editor's Pick: For caramelizing the crispy top layer on crème brûlée, or quickly searing meat during a barbecue, this torch has very responsive flame control—just a gentle turn of the dial takes it from a thin blue soft flame to a concentrated hard flame. The aluminum fuel tank lasts a long time on a single butane fill, and the upright design lets you set it right on the countertop without needing a free hand to hold it. It also comes in handy for soldering small circuit boards or loosening screws.
