(當然我做的沒她好看,需要累積經驗)
材料 - 蛋糕底
做這種蛋糕呢,你可以有兩種底,你可以烤一個蛋糕底,或是偷懶用壓碎的消化餅乾拌著奶油當底
❤️手上路的蛋糕底就是餅乾屑
如果要烤蛋糕底,材料如下:
⭐️抹茶粉一大匙
⭐️蛋3顆
⭐️糖60克
⭐️低筋麵粉60克
⭐️牛奶60克
⭐️蔬菜油25克
⭐️鹽巴1小撮

材料 - 慕斯
這裡的慕斯因為不用烤,所以成分是可以根據個人感覺去替換的。如下:
⭐️抹茶1大匙
⭐️牛奶125克
⭐️鮮奶油175克(heavy whipping cream)
⭐️奶油乳酪100克
⭐️吉利丁2片(或是吉利丁粉12克)
⭐️糖少許(我大概只加了30克)

步驟 - 抹茶海綿蛋糕底
⭐️蛋黃和蛋白分開
⭐️蛋黃和少許糖充分混合
⭐️慢慢加入植物油

⭐️牛奶微波加熱後,和抹茶粉混合

⭐️一次加一點就好,充分攪拌避免抹茶粉起疙瘩

⭐️把抹茶牛奶和蛋黃液充分混合

⭐️低筋麵粉分3次過篩

⭐️每次過篩後,充分混合麵糊

⭐️充分混合的麵糊十分濃稠

⭐️蛋白加入剩下的糖打至soft peak

⭐️把一部分的蛋白加入蛋黃麵糊裡,切拌均勻

⭐️把所有蛋白和麵糊充分混合

⭐️給你的烤模襯上烘焙紙

⭐️倒入麵糊
⭐️輕拍容器,拍出氣泡

⭐️烤箱預熱華氏355度(攝氏180度)
⭐️烤15分鐘
⭐️烤好的蛋糕要馬上拿出來放涼

⭐️盡快撕下烘焙紙

蛋糕體就完成啦!接下來換慕斯
步驟 - 慕斯
⭐️把吉利丁片用冷水泡軟
⭐️如果用的是吉利丁粉,建議加一點熱水先把吉利丁粉融化會比較好混合

⭐️加熱牛奶,把吉利丁片擰乾融入熱牛奶裡

⭐️把奶油乳酪、糖、和熱牛奶充分混合至沒有疙瘩

⭐️把鮮奶油打發至有紋路

依以下比例調出五碗顏色不同的慕斯液 (由淺至深)
⭐️120克慕斯糊
⭐️1/4小匙抹茶粉配100克慕斯糊
⭐️1/2小匙抹茶粉配90克慕斯糊
⭐️3/4小匙抹茶粉配80克慕斯糊
⭐️1小匙抹茶粉配60克慕斯糊

⭐️抹茶粉記得先用熱水調開再加慕斯糊才有辦法均勻混合

⭐️蛋糕模襯上新的烘焙紙
⭐️蛋糕底放入底部
⭐️由淺到深倒入慕斯糊

⭐️記得要從蛋糕的正中間到慕斯糊,不然中心點就會像我一樣歪歪的歐~

⭐️倒完後,放進冰箱冷藏4小時以上!
脫模
好的蛋糕要好好脫模才會漂亮
⭐️脫模前用吹風機把蛋糕模先吹一圈,讓蛋糕脫離模具
⭐️輕輕鬆鬆就把蛋糕請出來啦!
