不知道大家回国有没有去吃过鲍师傅,我回深圳的时候每次鲍师傅都排大队导致我上次暑假回去没吃到😂于是乎,我决定研究一下小贝的做法,发现完全不难并且很快手。其实就是戚风蛋糕加沙拉酱加肉松。接下来就开始真正的教程啦~
戚风蛋糕

材料
面粉Cake Flour45g(最好是低筋面粉,手头暂时没有低筋,用的是all purpose,不过味道也不差)
牛奶 Milk 25g
鸡蛋 egg 3个
白砂糖 sugar 50g (30g用在蛋黄,20g用在蛋白打发)
玉米油 Corn oil 25g
香草精Vanilla extract 1tsp
盐 1tsp

蛋白蛋黄分离,蛋白必须只有蛋白, 无油无水。

蛋黄加入液体先(牛奶,油)然后过筛筛入粉类,搅拌至无颗粒。

用手动打蛋器开低速打

蛋白先打发至这个程度然后加第一次糖,糖分三次加。

蛋白打发至变白色加第二次糖

明显变细腻后加入第三次糖,变高速打

现在可以看到明显的有打发的痕迹就差不多了。

取三分之一蛋白进入蛋黄糊拿刮刀切半均匀,千万不要搅拌会消泡。

然后把刚刚搅拌好的面糊加入剩下的蛋白中继续切拌均匀。

然后铺上油纸放入一个长方形的烤具中。摔几下让气泡震出放入烤箱。300度烤20分钟。

烤好啦,取出晾凉后用一个圆形的工具。

拿杯口压下去就可以有一个圆圆的蛋糕片啦。

涂沙拉酱在夹层然后在那一块蛋糕压上去

整个蛋糕涂满沙拉酱并粘上肉松,喜欢海苔的撒点海苔碎。
