老一辈的人都喜欢过农历生日,可是我就搞不懂那些日子了哈哈哈!外婆提醒了周日是妈咪的生日,然后赶着去买了淡奶油回家赶快做了!
妈咪很喜欢吃草莓口味的东西,除了草莓本莓之外,哈哈!搞不懂!然后就尝试了做草莓奶油蛋糕!这是第二次抹蛋糕,还是不是很好看!不过好吃就行🤣
戚风蛋糕胚材料:
蛋黄糊:蛋黄 4个,牛奶 40毫升,细砂糖 20克,油 40毫升,低筋面粉 70克
蛋白霜:蛋白 4个,细砂糖 70克,白醋 适量
349F 预热293F 50分钟

做法:
1⃣️ 蛋黄蛋白用你自己喜欢的方式分离
2⃣️ 蛋黄液加入细砂糖 抽打至没有感觉到细砂糖的沙沙声音

3⃣️ 加入牛奶和油 搅拌均匀

4⃣️ 过筛面粉分两次加入,用z型去轻轻搅拌,不要用力!5⃣️ 第二次一样z型的手法去搅拌均匀面粉

6⃣️ 再蛋白的盘子里加入几滴醋帮助打发,等看出大气泡就加入1/3的细砂糖

7⃣️ 中速打到蛋白快要细腻但是还有泡泡的时候再次加入1/3的细砂糖8⃣️ 等完全细致了之后,把剩下的1/3 再次倒入,打发到能拉出硬角角就可

9⃣️ 把1/3的蛋白霜加入蛋黄糊里面,要用fold in手法拌匀

1⃣️0⃣️ 把全蛋黄糊加入蛋白霜,再次用fold in手法拌均

1⃣️1⃣️ 倒入蛋糕模中,抖几下抖出大气泡就可以放入预热好的烤箱50分钟啦!

‼️ 划重点:等戚风凉透之后可以切成你想要的厚度然后方便接下来一层层的抹奶油!

抹奶油: heavy cream 250毫升,细砂糖 25克

1⃣️ 把细砂糖和heavy cream一起打发,看到小粗泡

2⃣️ 然后加入草莓酱,打发到还有一点点流动性不是挺身的状态就可以

3⃣️ 然后把一层戚风蛋糕,一层奶油的做法,把4片切出来的蛋糕成型

出来就是一个超级好吃的草莓奶油啦!然后自己可以发挥创意一下做一下装饰!

小提示💡
1⃣️没有刀切蛋糕分层怎么办? 答:可以用一条线交叉拉扯一层层的蛋糕就出来啦!不过要小心厚度,要不然一不小心就会切坏
2⃣️ 为什么奶油要有流动性? 答:因为这样子可以好一点抹动,要不然挺身了抹起来有点难度而且平滑的程度更不一
这是第二次抹奶油,然后也总结了一点第一次失败的结果,这次虽然抹的还是没有很好看,可是我觉得至少比第一次好看了哈哈哈哈!反正这不会是我第一次抹蛋糕哈哈哈!再加油吧!
