The layer of oil is to prevent the pan from rusting in storage, as it is a non-coated iron pan. 可以洗干净的哦,收到新锅,用洗洁精清洗,擦干烘干再涂油,正常开锅,就能使用了。涂这层油是为了防止锅体放置仓库容易生锈,因为它是无涂层的铁锅。

The double-ear version is lighter, and the one with a handle is more difficult to make, hence it's pricier. The handle is made of walnut.
