Hey foodies! Today I’m sharing six blueberry desserts I’ve made and absolutely loved. When it comes to fruit, blueberries might not be the first one that comes to mind — but when it comes to desserts, I always think of them. Blueberries just pair perfectly with cakes and pastries!
They’re also super affordable in the UK, so after baking you can still enjoy the rest fresh — or make a quick homemade blueberry jam ? Anyway, let’s dive straight into the deliciousness!

1️⃣ Blueberry Cupcakes ?
Ingredients:
2 eggs, 35g cake flour, 30g sugar, 30ml milk, 20g vegetable oil, a few drops of lemon juice, and some fresh blueberries (washed and dried).
Tools: 6 muffin cups, muffin tray
Steps:
- Separate the egg whites and yolks (make sure the bowl for the egg whites is grease-free and dry).
- In a large bowl, whisk egg yolks with milk and oil until smooth.
- Sift in the flour and mix until no dry powder remains.
- Add lemon juice to the egg whites and beat with an electric mixer.
- Gradually add sugar in three parts, whipping until stiff peaks form.
- Fold one-third of the meringue into the yolk batter, then combine with the rest gently using a spatula.
- Pour the batter into paper cups, add blueberries on top.
- Bake at 250°F (120°C) for 20 min, then 300°F (150°C) for another 15 min.
2️⃣ Blueberry Scones ?
Ingredients:
200g cake flour, 4g baking powder, a pinch of salt, 35g sugar, 80g butter (softened), 80ml milk, 80g blueberries.
Steps:
- Wash and dry the blueberries. Soften butter at room temperature.
- Mix flour, baking powder, salt, and sugar in a bowl.
- Rub in the butter with your fingers until crumbly, save a bit of the mixture.
- Add milk and knead lightly into two dough balls.
- Flatten one, spread half the blueberries, place the second on top, add the rest of the blueberries.
- Sprinkle the reserved crumb mixture on top, chill briefly for easier cutting.
- Cut into 6–8 triangles.
- Bake at 347°F (175°C) for 25 minutes.
3️⃣ Blueberry Burst Pancakes ?
Perfect for both adults and kids — even toddlers (6–24 months) can enjoy these as a healthy snack!
Ingredients:
100g milk, 100g cake flour, 20g sugar, 1 egg, some chopped blueberries.
Steps:
- Separate yolk and white.
- Mix milk with yolk, then sift in flour and stir until smooth.
- Beat egg whites, gradually adding sugar until soft peaks form.
- Gently fold meringue into batter.
- Heat a non-stick pan on low heat, spoon in batter, sprinkle blueberries, cover with a bit more batter.
- When bubbles appear on top, flip and cook the other side until golden brown.
- Stack the pancakes, dust with powdered sugar, and top with blueberries — bite in for that blueberry burst! ?
4️⃣ Mini Blueberry “Hug” Rolls (Olay Rolls) ?
Remember the “dirty towel roll” craze last year? This year’s viral treat is the adorable “Hug Roll”! Light, fluffy, creamy — and so easy to make.
Cake Ingredients:
2 eggs, 20g corn oil, 20g milk, 5g honey, 25g sugar, 35g cake flour, 5g cornstarch, lemon juice.
Cream & Toppings:
150ml whipping cream, 25g sugar, fruit toppings of your choice.
Steps:
- Separate eggs; whisk yolks with oil, milk, and honey.
- Sift in flour + cornstarch, mix lightly.
- Beat egg whites with sugar until soft peaks form.
- Gently fold mixtures together.
- Pipe batter onto parchment-lined tray, bake at 356°F (180°C) for 15 min.
- Cool, then pipe whipped cream on top and decorate with fruit or cookies.
? Tips:
Don’t overbake or the surface may crack.
Use clean, dry bowls for whipping cream/egg whites.
You can flavor your cream with matcha or cocoa.
5️⃣ Blueberry Clafoutis ?
A low-cal, easy-to-make French-style dessert that never fails!
Ingredients:
1 egg, 20g sugar, 70ml milk, 20g cake flour, 2g baking powder, a few figs, blueberries, a little butter, powdered sugar.
Steps:
- Butter your baking dish or Le Creuset pot.
- Place washed blueberries and halved figs inside.
- In a bowl, whisk egg and sugar, add flour + baking powder, then milk.
- Pour the batter into the dish, bake at 392°F (200°C) for 20 min.
- Sprinkle with sugar powder to finish.
6️⃣ Blueberry Muffins ?
Soft inside, crispy outside — perfectly balanced!
Ingredients:
250g blueberries, 200g cake flour, 1 tsp baking powder, 100g unsalted butter, ¼ tsp salt, 100g sugar, 2 eggs, 1 bottle of yogurt drink.
Steps:
- Combine flour, baking powder, and salt.
- Cream butter and sugar, add eggs and mix well.
- Add yogurt and combine.
- Mix wet and dry ingredients until smooth.
- Fold in blueberries, fill muffin cups, and bake at 356°F (180°C) for 30 min.
