吃完这个蛋糕卷,感觉自己变身白雪公主!
前段时间看到这个蛋糕卷的小视频后,对它可是“一见钟情”哈,看着视频中软乎乎的像“白云”一样的蛋糕卷真的超级想吃🤤🤣

配方:
50g 低筋面粉
60g 水
几滴 香草精
30g 植物油
4个(120g) 蛋清
60g 砂糖
150g 奶油奶酪(马斯卡彭芝士)
1/2个 柠檬
150g 鲜奶油+(适量白糖)
方形模具(25cm×25cm)

温馨提示:
150克奶油奶酪 和 150 克鲜奶油(这个比例芝士味会比较浓郁),可以根据自己的口味适当的调整比例;
个人比较喜欢:100克奶油奶酪+200克鲜奶油;
如果不喜欢奶油馅太多(减肥)的话,可以考虑:
80克奶油奶酪+150鲜奶油;
不喜欢柠檬酸味太浓的话,滴几滴柠檬汁就好,不
用半个柠檬都挤进去。
1.低筋面粉过筛进打蛋盆,加入水、香草精和植物油

2. 搅拌成均匀顺滑的面糊

3.蛋清打发至干性发泡,打发过程中分两次加入糖

4. 挖一部分打发的蛋清加到之前搅拌好的面糊中,搅拌均匀

5. 将搅拌均匀后的面糊转移到剩下的打发蛋清中,翻拌均匀

6. 取一个方形模具(25cm×25cm),铺上烘焙纸

7. 倒入蛋糕面糊,将表面抹平

8. 放入烤箱160℃(320华氏度)烤13分钟

9. 蛋糕烤好后从模具中取出,放一边晾凉

10. 奶油奶酪(马斯卡彭芝士)先室温软化,再挤入柠檬汁,搅拌均匀

11.鲜奶油加糖打发(建议把打发鲜奶油的盆放在冰水中打发,会比较好打发还能降低失败率)。

12. 将奶油奶酪(马斯卡彭芝士)加入打发的鲜奶油中,翻拌均匀

13. 蛋糕片表面盖上一张烘焙纸,翻面,将正面朝上的烘焙纸撕掉,盖上新的烘焙纸

14. 蛋糕片再次翻面,将正面朝上的那张烘焙纸撕掉,除掉蛋糕片表面粘黏的部分

15. 蛋糕片上均匀抹上一层奶油奶酪糊,剩下的铺成一个长条

16. 将蛋糕片卷起,卷成一个圆筒,稍微修整一下形状

温馨提示:卷蛋糕卷的时候,建议蛋糕还有余温的时候就开始卷,完全凉透后再卷蛋糕很容易裂开。
