梳芙厘,又叫蛋奶酥、舒芙蕾,法文称为soufflé,是一款经典的法式甜品。它属于松软蛋糕,刚烤好的时候样子长得圆圆胖胖,颤颤巍巍的抖呀抖呀,给人既可爱又优雅的蓬松感。梳芙厘出炉后的短短几分钟是它最美的一刻,因为它会随着时间和热气散去而快速塌陷,犹如昙花一现,所以要分秒必争地品尝。这时挖一勺梳芙厘,吃起来就像云朵,又像软绵绵的棉花糖,满满的层次感,吃到嘴里切到好处。看到这儿不知道宝宝们有没有想吃了呢(^U^)ノ~
食材:
鸡蛋三只、牛奶125ml、牛油28g、细砂糖25g(加入蛋白中)、糖40g、低粉20g

做法:
先涂一层牛油在容器里,再用扫轻轻刷一次,待会烤的时候梳芙厘会均匀的往上爬

倒入细砂糖,晃一下让其布满整个容器,剩余的糖倒出来放在另一碗中,放冰箱20分钟以上备用

蛋黄和蛋清分开

蛋黄中加入40g细砂糖,用电动打蛋器搅打,筛入低粉,混匀

牛油放在奶锅中融化、倒入牛奶,小火煮至微热

一边搅拌面糊,一边倒入牛奶,分开几次,每次都混匀

重新倒入奶锅中,小火煮7到10分钟,快速搅拌防止起颗粒,煮成面糊仍然有流动性即可

倒出放在干净的容器里,然后用保鲜膜封住以免洁皮,放冰箱冷藏

蛋清用电动打蛋器打发至粗泡,加入25g细砂糖,继续打,转高速打至蛋白可以微微竖起即可

加1/3蛋白在面糊中迅速以翻拌手法混匀,倒回剩余的蛋白中继续混匀

准备好容器,倒进面糊,轻轻震一下容器让里面的空气震走,多余的面糊可以用刮刀刮掉,用拇指沿着容器边画一圈,等下烤出来更好看

预热烤箱,中层,华氏356度烤15分钟,撒上糖粉,大功告成

口感:
入口即有丝滑松软的口感,糕体既有绵柔轻盈的空气感又不会过甜,一口就爱上这种独特的轻盈口感。我觉得凡是喜欢吃甜食的女生都会对它毫无抗拒力吧哈哈!
小贴士:
- 必须选择低粉才有入口即化的口感,高粉和中粉不适用
- 杯缘滚糖是让舒芙蕾均匀膨胀,烤的时候爬得更高
- 现做现吃,刚烤好的梳芙厘最漂亮最好吃,但时间一过就会塌陷,放凉了风味也会大为逊色
- 烤的中途不可以打开烤箱
